VINTAGE CONDITIONS

Across the Limestone Coast and South Australia, the 2019- 2020 season got off to a good start with below average but sufficient rainfall to provide good soil moisture levels. The season was cool and windy which impacted early vine growth, and resulted in smaller than average crops in most vineyards. Heat spikes around Christmas were isolated and the lead up to harvest was cool allowing for ideal, slow flavour development and very little disease pressure. The small quantities of high-quality fruit produced rich wines with great depth and complexity.

WINEMAKING

The fermentation was cool, and the fruit was on skins for 8-10 days to ensure the fruit vibrancy was enhanced. Careful use of selected yeast and oak for background characters add interest to this wine without deflecting interest from the red fruit aromas and flavours.

COLOUR

Magnificent dark plum and red hues.

AROMA

Lifted red fruits with hints of strawberry jam, plum and oak aromas.

PALATE

Generous and well rounded, showing sweet fruit and layered flavours styled for a ripe and persistent finish.

VINTAGE CONDITIONS

With very little rain and cloud over summer the fruit was unsullied. Temperatures were moderate with very few extreme heat days. Winemakers took the opportunity to allow fruit to remain on the vine to develop the best possible flavours. Temperatures cooled off late in the season which created perfect conditions for a long and slow-paced finish to the ripening period.

WINEMAKING

We utilise a French technique known as Saignée; immediately following crush, the juice is drained from the skins preventing deeper colours and tannins being
extracted from the skins. These skins have a lower juice to skin ratio and as a result,
produce a more intensely flavoured wine.

COLOUR

Pale pink rose petal.

AROMA

Strawberries and cream with hints of ground spice.

VARIETAL COMPOSITION

Shiraz, Cabernet Sauvignon, Sauvignon Blanc

PALATE

A bright luscious wine with sweet strawberry and cream flavours. Acidity is
fresh and vibrant, with a sweet fruity finish.

The fruit is harvested in the cool of the night and then promptly
processed through the winery. The grapes are crushed and pressed to recover the
juices which are then settled before fermentation.

Very pale green.

AROMA

Tropical fruits; passionfruit and pineapple and freshly cut grass

PALATE

Full of citrus and gooseberry flavours with a crisp, mouth-watering acidity
on the finish

VINTAGE CONDITIONS

It has been noted as one of the best growing seasons in recent years, with a wet winter allowing the vines to produce a healthy canopy, and mild temperatures and periodic rain providing good growing conditions. Very little heat stress was experienced across the growing regions. A cool and dry summer sustained even ripening and allowed viticulturists and winemakers to harvest grapes
at their optimal fruit expression.ss.

WINEMAKING

The fruit was harvested in the crisp hours of the early morning and
promptly transported to the winery for processing. A gentle extraction process
produced pristine juice which was clarified before fermentation. The fermentation
was conducted at 12-16 deg C to ensure the fruit characters from the vineyard were
maintained.

COLOUR

Light straw with green edges.

AROMA

Lovely white nectarine and apple characters, with hints of citrus and pear.

PALATE

Light, lively and crisp with fresh fruits and mouth watering pear, peach
and bright acidity.

WINEMAKING

Fruit was harvested in the night to ensure it was as cool as possible when picked before being crushed and de-stemmed and pressed to a settling tank. The juice was clarified and inoculated with selected yeast to express fruit characters. A
number of parcels were fermented on oak, some underwent MLF and others matured on oak all with extended lees contact to build depth and to give a range of options when blending.

COLOUR

Pale Straw.

AROMA

Luscious and fleshy white peach, honeydew and Crème Brûlée oak notes.

PALATE

Expressive yet refined with generous stone and citrus fruits and hints of
vanilla and apple cake spice notes. A fresh but textural mid-palate with great balance
and length.

WINE ANALYSIS

Alc/Vol: 13%, pH:3.34, Acidity: 6.0.
